Anything is possible, question becomes is it worth the effort. A MAC engine can be made to run really well with a lot less effort than what you are considering. However it is interesting to note the first barrels used on Vipers were modified alloy MAC items. I think the spacing of the cylinder / head hold down studs for a MAC is closer than a Viper so becomes the limiting factor in boring out MAC cases to accommodate a Viper barrel.
