I have to ask the obvious question of does a triumph 500 measure the same as a 650 head 2.755 from head gasket surface to rocker box gasket surface?

Pre-unit 500 head, or unit 500 head?
If pre-unit: cast-iron or aluminum?

Unit head, later style, after the squish band style.

I just measured a 1974 head at 2.712"

Since it had 0.019" wear in the stock bore I doubt the head had been off the engine until I got it (not planed/decked)

More bikes and projects than you can shake a stick at but they should be done in two shakes of a lamb's tail.
