I have an NOS ewarts push/pull with cork plunger. before I put it into service, should I coat the cork with anything?

No coating needed , Just boil it in water for a minute or two first , It's pretty much what you have do to any new cork washer to get it to seal correctly ,

I apply some P-80 on the cork to alloy the cork to "slide" into place when installing

Often times its difficult to insert the plunger

+1, I squeeze out the water first as the cork will have swelled up. After a few years the do dribble again, but repeat the process and they are good to go.
